Brown Lentils and Rice


Megadarra is a delicious famous recipe in the Middle East countries especially in Egypt and morocco and is often served with plain yogurt
المقادير
5 tbsp. olive oil  
7 c. vertically sliced onions  
4 1/2 c. water  
1 1/4 c. rinsed lentils,  
1 1/4 c. long-grain rice  
1 tsp. salt  
Dash of pepper  
طريقه التحضير
Sauté onion in some preheated oil till caramelized with stirring constantly
Parboil lentils for 20 minutes in salted water
Put half of the onion, with some uncooked rice and seasoning in a pan and cook for half an hour
Serve the rice mixture in a flat serving dish topped with the boiled black lentils and then sprinkle the remaining part of the caramelized onion
Makes 11 1/2-cup servings
Preparation time: 15 minutes
Cooking time: 1 hour
