Boiled Shanks

6-8 lamb shanks |

1 cup yogurt |

3-5 mastic grains |

3-5 cardamom seeds |

Salt and black pepper |

 |
2 onions |
|
 |
1 tablespoon lemon juice |

Blanch shanks, drain, place in pot, add onions, salt, pepper, and spices tied in a muslin bag. |

Cover with water , bring to a boil over high heat, then reduce to minimum and cook for about 90 minutes, removing scum occasionally. |

Remove shanks from broth, remove bones, adjust seasoning, add lemon juice, and serve warm. |

 |
Remove bag from broth, pound onion, adjust seasoning, and parboil for 5-7 minutes. |
|
 |
Add 1 tablespoon yogurt to each plate and serve. |
