Boiled Rabbit

1 rabbit(nearly 2 kgs) |

1 chopped onion |

2-3 mastic grains |

2-3 cardamom seeds |

Salt and black pepper |

Slice rabbit into neat joints, put over very slow fire, then discard the juice it loses and repeat again. |

Knead onion with seasoning. |

Parboil water with onion and spices, then add rabbit and cook over slow fire for about 1 hour. |

You can use the broth in making mulukhiya, bechamel sauce, or rabbit soup, adding rice or vermicelli. |
