Boil 3-5 cups water with onion, salt, mastic grains, and cardamom pods tied in a muslin bag. |

Add gizzards to the boiled water and cook for 11-12 minutes. |

You can enjoy broth with rice or vermicelli. |

Since you may not find gizzards always ready for cooking, you may need to clean them, slit through the thick muscle, and discard the coarse yellow skin and the interior contents. |
