Boiled Brains


المقادير
1 beef or 2 sheep's brains  
2-3 teaspoon lemon juice parsley  
1 onion  
Salt  
طريقه التحضير
Soak brains in salted water to clean for about 10 minutes.
Try to take off skin very gently and avoid to damage brains.
Drain, place in new boiling salted water, and blanch for about 3 minutes.
Boil water with onion, lemon juice, and salt.
Lower brain gently into the onion mixture and cook for 4-5 minutes.
Leave to cool and rest.
Raise brain using a skimmer and slice about 2 cms thick.
Serve on a bed of parsley.
