Soak brains in salted water to clean for about 10 minutes. |

Try to take off skin very gently and avoid to damage brains. |

Drain, place in new boiling salted water, and blanch for about 3 minutes. |

Boil water with onion, lemon juice, and salt. |
|
 |
Lower brain gently into the onion mixture and cook for 4-5 minutes. |

 |
Leave to cool and rest. |
|
 |
Raise brain using a skimmer and slice about 2 cms thick. |
|
 |
Serve on a bed of parsley. |
