Blini are delicious pancakes that add a festive flavor to Maslenitsa celebration in Russia.

Mix flour with buttermilk in a large mixing bowl and blend thoroughly. |

Add salt and sugar and stir constantly. |

Add egg and stir until well blended. |
|

Lightly brush a frying pan with 1 tsp. oil. |

Place pan over slow fire for seconds to heat. Sway pan well to make sure this batter coats the pan's bottom. |

After about 2 to 3 minutes, slowly flip over batter to fry other side. |

When two sides are done, remove pancake from pan. |

Place onto a serving plate and cover with a cloth towel. Do the same to fry all batter. Serve warm. |

Before frying, batter may thicken. If so, add a little more warm water to mixture in bowl and blend thoroughly. |
