Biscuit Tortoni


المقادير
1/2 c. almond macaroon cookie  
1 tsp. almond extract  
3/4 c. whipping cream, chilled  
3 tbsp. sugar  
2 tbsp. maraschino, chopped  
1/4 c. chopped toasted almonds  
crumbs  
cherries

Line 6 muffin with paper cupcake liners.
Mix whipping cream and sugar in a chilled bowl, then beat until thickens. Add all macaroon crumbs (leaving only 2 tbsp. crumbs aside) with almond extract, cherries, and almonds into whipped cream.
Cover with aluminum foil or plastic wrap and allow to freeze (chilling time may reach about 4 hours).
Another way to prepare Biscuit Tortoni is to use 2 softened low-fat or nonfat frozen yogurt instead of whipping cream and sugar.
