Beef Sausage ( Meatless) (2)


المقادير
A:Main Ingredients:  
1 kg chitterlings  
Salt  
B:Filling:  
2 cups rice  
3-4 ripe tomatoes, shelled and sliced  
2 tablespoons oil  
Salt and black pepper  
2 onions, chopped very finely  
1 tablespoon dill, chopped  
2 tablespoons parsley, chopped  
Mixed spice

Make a well-blended mixture of all filling ingredients.
Slice chitterlings into pieces of about 15 cms long.
With thread, tie one end and fill with a moderate amount, then tie tail end.
Spread on smooth surface and distribute the filling evenly by rolling slowly.
Transfer onto cooking pot, pierce with fork in several places, cover completely with salted water, and boil for 35-40 minutes.
Drain and serve (boiled or fried).
