Beef Head Meat, Fried

Pour changes of water to wash meat then drain.

Place into pot and add chopped onion, salt, and peppercorns.

Cover with water until tender, drain, then fry in the oil.

Drain stock and add cornstarch to thicken.

Serve in individual dishes.
