Beans Soup

2 cups white broad beans |

4-5 mastic grains |

1 tablespoon lemon juice |

Salt and black pepper |

1 onion, cut into tiny pieces |

1-2 tablespoons oil |

Leave beans in water to soak overnight, changing the water once or twice, then drain. |

Put oil over flame and heat, mix in the mastic for 10 seconds, then cover with water and bring to a boil. |

Add the beans and onion and cook, removing scum occasionally. |

When the beans are tender, after 35-40 minutes, add lemon juice, salt, and pepper and parboil for further 3-5 minutes. |
You can also follow other steps to prepare this dish:
Fry the onion and beans lightly, add enough water to cover and add lemon juice. And instaed of mastic, you may use 1/2 to 1 teaspoon of ground cumin. |
