Beans Soup


المقادير
2 cups white broad beans  
4-5 mastic grains  
1 tablespoon lemon juice  
Salt and black pepper  
1 onion, cut into tiny pieces  
1-2 tablespoons oil  
طريقه التحضير
Leave beans in water to soak overnight, changing the water once or twice, then drain.
Put oil over flame and heat, mix in the mastic for 10 seconds, then cover with water and bring to a boil.
Add the beans and onion and cook, removing scum occasionally.
When the beans are tender, after 35-40 minutes, add lemon juice, salt, and pepper and parboil for further 3-5 minutes.
You can also follow other steps to prepare this dish:
Fry the onion and beans lightly, add enough water to cover and add lemon juice. And instaed of mastic, you may use 1/2 to 1 teaspoon of ground cumin.
