Basic Mixture (Kibbeh)
This dish a Lebanese/Syrian recipe, where the kibbeh mixture is pounded (not minced) in a large stone mortar until tender. In Syria and Lebanon, this recipe (known as kibbeh) is the most popular one. In Egypt, it is pronounced kubeiba and it passes through a mincer several times.

100 g animal fat |

½ kg bulgur |

Salt and black pepper |

1-2 onions |

Place bulgur in a pot filled with warm water and soak for 1 hour. |

Mince meat, fat, and onions two or three times, adding small cubes of ice every often to give meat more consistency. |

Strain bulgur and repeat mincing with meat, salt and pepper at least twice or until it becomes of soft dough. |
