Basic Mixture (Kibbeh)


This dish a Lebanese/Syrian recipe, where the kibbeh mixture is pounded (not minced) in a large stone mortar until tender. In Syria and Lebanon, this recipe (known as kibbeh) is the most popular one. In Egypt, it is pronounced kubeiba and it passes through a mincer several times.
المقادير
1 kg beef  
100 g animal fat  
½ kg bulgur  
Salt and black pepper  
1-2 onions  
طريقه التحضير
Place bulgur in a pot filled with warm water and soak for 1 hour.
Mince meat, fat, and onions two or three times, adding small cubes of ice every often to give meat more consistency.
Strain bulgur and repeat mincing with meat, salt and pepper at least twice or until it becomes of soft dough.
