Basic Crepe Batter


المقادير
1/2kg all-purpose flour  
4 eggs  
1/4 c. melted butter  
1/4 tsp. salt  
2 1/4 c. milk  
طريقه التحضير
Mix eggs and salt in a bowl then alternately stir in flour and milk.
Beat the mixture with a whisk or electric mixer until creamy, then add the melted butter and continue beating.
Chill batter at least 1 hour.
Heat a crepe pan on medium-high heat. Pour the crepe batter into the pan as you would to make a pancake.
Swirl the batter to coat the entire bottom of the pan and leave till the bottom becomes firm.
Lift the crepe gently from the pan and quickly flip it to cook the other side.
Leave on fire till brown and then move it to a plate.
Preparation time: You can use the above ingredients for preparing 32-36 crepes in 2 hours
There are two ways for serving such pancakes:
As a desert crepe using sweet butter and filling it with fruit.
As a main course filling it with meat, fish, vegetables, and covered with sauce.
