Baked Fish with Tahina Sauce


المقادير
2 tablespoons flour  
2 kgs white fish  
2 onions  
few celery stalks  
salt and mixed spices  
2 cups tahina sauce  
cooking oil

Prepare fish, cut into large chunks, then coat with seasoned flour.
Saute in sizzling oil till golded and well cooked, then let to cool on an absorbent paper.
Fry the thinly chopped onions and add to flaked fish, then put in an oven-proof dish
Parboil fish bones, skin, and celery for quarter of an hour, then strain and use for preparing tahina sauce.
Prepare tahina sauce in the way that would be mentioned later and top the fish with
Cook in preheated moderate oven for a quarter of an hour.
- To prepare tahina sauce, bring the following ingredients:
2 tablespoons lemon juice
1 tablespoon vinegar
1/2 teaspoon cumin, salt
1 cup tahina
3-5 crushed garlic cloves
finely chopped parsley
1 1/2 to 2 cups of the broth of fish bones and skin
- Mix tahina with vinegar, salt, and broth with stirring well untill resulting in a smooth paste results.
- Add any or all optional ingredients and pour over the fish before baking it.
