Prepare fish, cut into large chunks, then coat with seasoned flour. |

Saute in sizzling oil till golded and well cooked, then let to cool on an absorbent paper. |

Fry the thinly chopped onions and add to flaked fish, then put in an oven-proof dish |

Parboil fish bones, skin, and celery for quarter of an hour, then strain and use for preparing tahina sauce. |

Prepare tahina sauce in the way that would be mentioned later and top the fish with |

Cook in preheated moderate oven for a quarter of an hour. |
- To prepare tahina sauce, bring the following ingredients:
2 tablespoons lemon juice
1 tablespoon vinegar
1/2 teaspoon cumin, salt
1 cup tahina
3-5 crushed garlic cloves
finely chopped parsley
1 1/2 to 2 cups of the broth of fish bones and skin
- Mix tahina with vinegar, salt, and broth with stirring well untill resulting in a smooth paste results.
- Add any or all optional ingredients and pour over the fish before baking it.
