Apple Cake

To make 8 to 10 pieces, you need:  
4 medium-sized tart apples  
whipped cream  
1 lemon  
2 tsp. cinnamon  
1 1/3 c. flour  
1 1/4 tsp. baking powder  
1/2 c. butter or softened margarine  
1/2 c. sugar  
2 eggs  
Instead of apples, you can use some pitted cherries or twelve prune.

Preheat oven to 350°F and Grease a pan
Separate rind from lemon and leave rind aside.
Make lemon juice from and put into a bowl.
Peel and core apples and chop into quarters, then dip into a bowl with lemon juice to avoid becoming brownish.
Put cream, butter, and sugar in a large bowl, then add eggs and lemon rind. Mix well until fluffy. Add the all-purpose flour and blend well then pour into pan.
Make deep shredded cuts intervals across rounded side of each piece of apple. Press apples, cut side up, into the dough.
Sprinkle apples with a mixture of cinnamon and 2 tbsp. sugar.
Mix with flour in a medium bowl and bake for 30 to 40 minutes, then top with whipped cream to serve.
