Anzac Biscuits


This dessert is named after the Australian and New Zealand Army Corps (ANZAC), which fought in World War I (1914–1918).

To make 4 dozen biscuits, prepare:  
1 c. rolled oats  
Some unsweetened coconut cut lengthwise  
1 c. flour  
1 tbsp. honey  
1 c. sugar  
butter or margarine  
1 tsp. baking soda  
Instead of honey, you can use light corn syrup

Bring oven to 300°F heat.
Place the flour, oats, coconut, and sugar into a bowl and mix thoroughly.
Dissolve butter (or margarine) in a small pan over low heat, and stir in honey or corn syrup.
Put baking soda in a small bowl then add 2 tbsp of boiling water and stir to dissolve then add to dissolved butter mixture.
Pour melted butter mixture over oat mixture and blend thoroughly
Cover two baking sheets with aluminum foil placing some dough apart onto sheets and bake for 11:12 minutes until browned.
Allow to cool for 1 to 2 minutes. Transfer biscuits carefully and serve.
