Újházi is a very popular chicken soup dish in Hungary. Its name was originally taken from a 19th-century actor with the name, Ede Újházi. This famous man cooked this soup dish for his friends.

Seed the green pepper and cut in half. Cut the stalk celery in half. |
|

Peel and quarter the onion. Peel cloves garlic. Set aside. |
|

Place chicken in a large kettle. |
|
 |
Add carrots, salt, peppercorns, caraway seeds, parsnips, brussels sprouts, green pepper, celery, onion, garlic, tomato paste, paprika, and water. |

Cook mixture over medium-low heat about 40 to 45 minutes until tender. |

While cooking meat, keep removing foam that forms on the surface of soup with a large spoon. |

Add mushrooms and sweet peas. |

Simmer for 15 minutes more. |

When meat is very tender, remove from heat and sieve soup (Do not discard the broth). |

Set chicken and vegetables aside and allow to cool. |

When chicken is slightly cool, remove from bones and discard skin. Slice chicken and vegetables into mouthful pieces. |

Heat broth once again over medium heat. |
|
 |
Add noodles and simmer about 5 minutes. |
|
 |
Add chicken and cooked vegetables and heat through. |
|
 |
Place in serving soup bowl and garnish with chopped parsley. Serve hot. |
